INGREDIENTS
2 large chicken breasts, cut into 3cm strips
- 800 g frozen peas
- 1 onion, diced
- 2 carrots, sliced
- ½ bell pepper, sliced
- 1 parsnip, sliced
- 1 400g/ml can tomato passata
- a handful of dill
- 2 tbsp vegetable oil
- 1 cup water
- Salt & pepper
DIRECTIONS
- Heat the oil in a pot over medium heat and add the chicken.
- Fry for a few minutes until about halfway cooked.
- Add the onion, carrots, parsnip, and bell pepper and fry them together with the chicken for a few minutes.
- Season with salt and pepper, add the water and cook for about 8-10 minutes.
- Now add the tomato passata and let it cook for 8-10 more minutes.
- Add the frozen peas and the chopped dill and cook for 8-10 more minutes.
